Blackened Alligator

2 lbs. Alligator Filet cut into strips ½ tsp. Garlic Powder
3/4 lb. (3 sticks) butter-melted

½ tsp. Cayenne Pepper

½ T. Paprika Dash Black Pepper
1 tsp. Salt Dash White Pepper
½ tsp. Onion Powder 1/4 tsp. Oregano
1/4 tsp. Thyme

Heat a large cast-iron skillet over very high heat until you see white ash in the bottom of the skillet, at least 10 minutes.

Thoroughly combine the seasonings in a small bowl. Dip each strip in melted butter, then sprinkle seasoning mix on all sides. Place in the hot skillet and carefully pour a little hot butter on top of each strip. Cook uncovered for about 2 minutes until it looks charred. Turn and again pour a little butter on top. Cook for another 2 minutes or until alligator is done.

(CAUTION: This method of cooking produces a lot of smoke and if cooked indoors, provide adequate ventilation.)
